For a hearty, warm, endo-friendly meal this winter, try this EASY turkey chili.
You'll need:
1 lb (one package) - Ground turkey (Organic if available)
1 can - Kidney or Pinto beans
32 oz - V8 vegetable juice (1/2 of the large bottles)
1/2 onion, chopped
4 cloves of garlic, minced
2-3 colorful peppers, red/yellow/orange, or half a bag of the mini-peppers, chopped.
1 salad bag - Spinach and/or Kale
Olive oil
You'll need:

In a large pot, saute the garlic and onions in a small amount of olive oil. Add the ground turkey and cook fully. Mix in the peppers and spinach/kale. Cook until the greens are cooked down and dark green. Add the vegetable juice and beans. Black pepper and sea salt can be added for taste. Heat until boiling and simmer longer if desired.
